What happens when you freeze fish products?

Fish products begin to spoil as soon as death occurs and you will slowly being to see a significant loss in fluid which contains fats and proteins. The flesh tends to soften and undesirable smells and flavours are produced. By immediately lowering the temperature of the dead fish, spoilage can be significantly delayed and almost stopped altogether if the temperature is kept low enough.
